You can still use your phone, however: you can take photos, listen to music, play games, or compose emails/messages to send later. Basically anything that doesn’t require a signal or internet.

Fixes for iPhone 12 or iPhone 12 Pro stuck on Airplane mode
Toggle Airplane Mode.
Refreshing Airplane mode can get your iPhone 12 or iPhone 12 Pro out of Airplane mode freeze. Go to Settings and turn on Airplane Mode. Wait 30 seconds. Then turn off Airplane Mode.
Restart your iPhone
If your iPhone 12 or iPhone 12 Pro is in Airplane mode even when you haven’t activated it, restarting your device may fix your issue. Here is how you can restart your iPhone:
Press and hold the side button and the volume down (or up) button together until the “slide to power off” screen appear on the screen. Drag the slider from left to right. Wait a few seconds for your iPhone to fully turn off. Then press and hold the side button until the Apple logo appears on the screen.
Now check if the Airplane appears. If you’re still seeing the Airplane, move on to the next solution.
Update your iPhone
If Airplane mode icon won’t go away on your iPhone 12 or iPhone 12 Pro, make sure that your device is running the latest version of iOS. Apple uses software updates to introduce new features, bug fixes, security patches, and other optimizations. To check for an iOS update, go to Settings > General > Software Update. If there is an update available, follow the onscreen prompts to update your iPhone.
Update your carrier settings.

Force-restart your iPhone
